  3. 4 teaspoons sweet pickle relish.
  4. 1 tablespoon finely minced white onion.
  5. 1 teaspoon white vinegar.
  6. 1 teaspoon sugar.
  7. 1/8 teaspoon salt.

Chicken Bacon Ranch Bake

Chicken Bacon Ranch Bake

  • 1 can crescent rolls
  • 2 cups shredded rotisserie chicken
  • 8 slices cooked crumbled bacon, divided
  • 1 cup mayonnaise
  • 1 tablespoon dry Ranch seasoning
  • 1 large tomato, chopped
  • 3 medium green onions, chopped
  • 1 cup shredded Cheddar Jack cheese blend
Preheat oven to 400 degrees. Spread crescent rolls onto a 13×9 inch baking pan, sealing perforated edges. Bake 10 minutes. Meanwhile, mix mayo and Ranch seasoning until well combined. In a medium bowl crumble 6 slices of bacon, add shredded chicken, and 1/2 cup of the mayo Ranch mixture. Stir until combined. Remove baked crescent sheet from oven, spread the remaining mayo Ranch mixture over the top within a 1/4 inch of edges. Spread the chicken mixture over the top of the Ranch mixture. Sprinkle with tomato and cheese. Bake 10 to 12 minutes or until cheese is hot and melted. Sprinkle with remaining bacon and green onions. Eat and enjoy!

My Morning Smoothies


Spinach Smoothie

1 cup liquid 
       (I typically use unsweetened coconut milk, almond milk, or a blend, but you can also use coconut water, regular milk, or water)
2 cups organic baby spinach

BLEND

Add 1/2 to 1 scoop of protein powder (I use strawberry or vanilla whey protein)
1/2 to 1 whole sliced banana (frozen)
1/2 to 1 cup of frozen pineapple (frozen)

BLEND

Breakfast Smoothie

1/2 cup frozen blueberries
1 sliced and frozen banana
2-4 tablespoons of old-fashioned oats
1 tbsp powdered peanut butter
1 cup unsweetened almond or coconut milk


Can also had handful of spinach, and/or protein powder

Strawberry Orange Dream Smoothie 

1/2 cup plain, non-fat Greek yogurt (or regular yogurt)
1/4 cup unsweetened coconut or almond mlk
1/4 cup orange juice
1 cup frozen strawberries
1/2 orange (peeled)

Honey, if you want

  • ¾ cup water
  • ⅓ cup chia seeds
  • 2 cups ice, optional

Peaches and Cream

One Pot Cheesy Taco Skillet- this easy, delicious, veggie packed meal is quick and great for a budget- as well as a low carb diet!
INGREDIENTS
  • 1 lb lean ground beef
  • 1 large yellow onion, diced
  • 2 bell peppers, diced
  • 1 can diced tomatoes with green chilis
  • taco seasoning
  • 3 cups baby kale/spinach mixture (this sounds like a lot- it cooks down to a small amount)
  • 1½ cup shredded cheddar and jack cheese
  • green onions, to garnish
INSTRUCTIONS

  1. In a large pan, lightly brown ground beef and crumble well.
  2. Drain excess fat.
  3. Add onions and peppers, and cook until browned.
  4. Add canned tomatoes, taco seasoning, and any water needed for taco seasoning to evenly coat mixture (up to 1 tbsp- the liquid from the tomatoes will help)
  5. Add greens and let fully wilt.
  6. Mix well.
  7. Cover with shredded cheese and let cheese melt.
  8. When cheese is melted, serve over a bed of lettuce, rice, or in a taco or burrito!
