One-Pot Chili Mac n Cheese

This One-Pot Chili Mac n Cheese is the perfect thing for lazy Sundays or a weeknight dinner. It’s ready in 30 minutes and combines two of the BEST comfort foods around!

Ingredients
  • 1 tbsp Canola or Olive Oil
  • 1 lb Ground Beef
  • 2 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Mustard Powder
  • 1 tsp Salt
  • ½ tsp Pepper
  • 2 cups Beef Broth
  • 1 cup Water
  • 1 – 14.5 oz. Can Diced Tomatoes with Green Chiles (undrained)
  • 3 cups Elbow Macaroni (uncooked)
  • 8 oz. Cream Cheese
  • ½ cup Milk
  • 1 tbsp Lime Juice
  • 1 cup Shredded Sharp Cheddar Cheese
Instructions
  1. Heat oil in a large deep pan or pot on medium-high heat.
  2. Add ground beef to pan, break it up with a spatula and add the seasonings in.
  3. Cook for 5-7 minutes, stirring frequently, until beef is browned and cooked through and then drain the juice from the beef.
  4. Add beef broth, water, and tomatoes and bring to a boil.
  5. Once boiling, add in uncooked elbow macaroni and cook covered for 8-10 minutes until macaroni is tender.
  6. Add in cream cheese, I like to use my spatula to break it into smaller pieces as I add it so it melts faster.
  7. Add in milk, lime juice, and shredded cheese and stir until cheeses have fully melted and mix is well combined.
  8. Remove from heat and serve hot.
