One-Pot Chili Mac n Cheese

This One-Pot Chili Mac n Cheese is the perfect thing for lazy Sundays or a weeknight dinner. It’s ready in 30 minutes and combines two of the BEST comfort foods around!

Ingredients
- 1 tbsp Canola or Olive Oil
- 1 lb Ground Beef
- 2 tsp Chili Powder
- 1 tsp Garlic Powder
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Mustard Powder
- 1 tsp Salt
- ½ tsp Pepper
- 2 cups Beef Broth
- 1 cup Water
- 1 – 14.5 oz. Can Diced Tomatoes with Green Chiles (undrained)
- 3 cups Elbow Macaroni (uncooked)
- 8 oz. Cream Cheese
- ½ cup Milk
- 1 tbsp Lime Juice
- 1 cup Shredded Sharp Cheddar Cheese
Instructions
- Heat oil in a large deep pan or pot on medium-high heat.
- Add ground beef to pan, break it up with a spatula and add the seasonings in.
- Cook for 5-7 minutes, stirring frequently, until beef is browned and cooked through and then drain the juice from the beef.
- Add beef broth, water, and tomatoes and bring to a boil.
- Once boiling, add in uncooked elbow macaroni and cook covered for 8-10 minutes until macaroni is tender.
- Add in cream cheese, I like to use my spatula to break it into smaller pieces as I add it so it melts faster.
- Add in milk, lime juice, and shredded cheese and stir until cheeses have fully melted and mix is well combined.
- Remove from heat and serve hot.
